All of us mom’s love to get a healthy dinner on the table but many of us struggle with the combination of great ingredients and quick timing.
Whether you have blazed in the door after work and are now trying to get dinner on the table while your toddler has a melt down or you have been busy at the doctors office AGAIN with baby and have forgotten to even pull anything out?
No one expects you to be super mom and do it all! But the best thing any mom can learn is to pick up a few tricks and tips from her fellow moms! Learn to love your crock pot, figure out how to take that grilled chicken and reivent it into a salad, a pasta and a cold sandwhich and your hubby will begin to think you are a rockstar. Just remember not to spoil him to much … as it is always great to have those ‘stay in date nights’ making a sexy pasta dinner over a glass of wine or leaving his favorite steak in the sink for him to get inspired to turn on the bbq when he comes home at night. Cause there is nothing sexier than a man cooking dinner as well!

Tasty Sweet and Sour Chicken. Serve with Fluffy Brown Rice.
Hands on time: 15 minutes
Cooking time: 10 minutes
Yield: 5 portions (suitable for freezing)
Ingredients
1 egg yolk
1 1/2 tbsp cornflour
1 tbsp milk
2 large or 3 small chicken breasts (approx12 oz) cut into bite sized pieces
3 tbsp olive oil
4 oz carrots, cut into matchsticks
3 oz small zucchini, cut into strips
3 scallions, finely sliced
salt and freshly ground black pepper
Sweet and Sour Sauce:
2 tbsp soy sauce
4 tbsp tomato ketchup
3 tsp rice wine vinegar
3 tsp superfine sugar
2/3 cup water
2 tsp cornflour
Directions
In a bowl, beat together the egg yolk, cornflour and milk. Heat 2 tbsp of the oil in a wok or frying pan. Season the chicken, dip into the batter and sauté the chicken for 3 to 4 minutes. Remove from the wok and set aside. Meanwhile, mix together all the ingredients for the sweet and sour sauce.
Heat the remaining vegetable oil in the wok and stir fry the carrot for one minute, then add the zuchinni and stir fry for 2 minutes. Add the sauce, bring to the boil and cook for 2 to 3 minutes. Add the chicken and heat through for a couple of minutes. Remove from the heat and stir in the scallions. Season to taste.

My go-to quick dinner (or lunch) is macaroni and cheese. I don’t usually use a recipe, so I am hoping my measurements are close to accurate below – this is what I use for our little family of 3.
The total time is about 15 minutes – the time it takes to boil the water and cook the macaroni noodles.
My cheese sauce is a basic white sauce w/ cheese added. On stove melt 1 tablespoon of butter, stir in equal amount of flour. Let bubble for 5-10 seconds, then add milk (about a cup). Stir on medium high heat until starts to bubble/boil (and thicken). Then turn heat down to low and stir in grated cheese (about 1.5 cup). I usually use a sharp cheddar as I like the flavour. Stir occasionally at low heat until macaroni is ready. Then stir together and serve.
Options:
- add a teaspoon of dry mustard or paprika to sauce
- you can bake it for a crispy topping. Just put into a casserole dish, add some grated cheese &/or breadcrumbs and bake for 15 minutes at 375.
- add meat like bacon or hot dog pieces
- add veg like cauliflower, mushroom or broccoli (be sure to cut into small little pieces so little guys can pick up on their spoon along with the macaroni)

Tropical Pizza
Ingredients1 large whole-wheat or regular Boboli pizza crust (14 ounces)
1 cup pineapple mango chipotle salsa (such as Pace)
1 cup shredded Monterey jack cheese
1/2 cup shredded Swiss cheese
1/2 green pepper, seeded and thinly sliced
1/2 red pepper, seeded and thinly sliced
1/2 small onion, peeled and thinly sliced
Make It
1. Heat oven to 450 degrees F
2. Place pizza crust on a large baking sheet. Spread 2/3 cup of the salsa over the crust. Sprinkle the cheeses over the salsa. Spoon remaining 1/3 cup salsa over cheese; scatter pepper and onion over the top.
3. Bake at 450 degrees or 10 to 12 minutes or until heated through and cheese is melted. Allow to cool slightly. Cut into 8 slices.

Mini flat bread pizzas
1 sweet potato
2 carrots
Pizza sauce
Grated cheese
Flat bread
Your favorite toppings. I like making this meal when I have left over roast chicken and veggies.
Peal and Boil sweet potato and carrots until tender. Fork mash the veggies seperately or blend in food processor.
Spread sweet potato (or carrots) on flat bread. Add tomato sauce and other toppings, top with cheese.
Put in oven and broil for 5 minutes.
Cool and serve. My son and husband love these! I love the extra veggies!
